Black Cod is most definitely a gourmet fish. Sometimes known as Sablefish or Butterfish, it has a white and fatty meat with a buttery flavour and a velvety texture. Black Cod can be eaten with a clear conscience as stocks are plentiful and it is sustainably fished in the Pacific fisheries of Alaska, Oregon and California.
Black Cod has been made popular in recent years by celebrity chef and maestro of Japanese fusion cooking, Nobuyuki Matsuhisa, better know simply as "Nobu". In business partnership with actor Robert De Niro and with numerous hotel and restaurants across the world, Nobu is probably the world's most recognisable Japanese chef. "Black Cod Miso" is known as his signature dish and was first offered at his restaurant in Beverly Hills, California. It soon became a favourite of diners at Nobu worldwide and it remains extremely popular despite it's high price of $36 per fillet. Former England and Liverpool footballer Peter Crouch mentions Nobu's Black Cod Miso in his autobiography "I Robot" as one of only three dishes eaten by Premier League footballers when they visit upscale eateries in London!
