Silver Mullet Wild From Cornwall Scaled & Gutted 800g-1kg Serves 2-3

This beautiful grey mullet is similar to sea bass but with larger scales and can be baked, steamed, grilled or pan-fried.

It can be paired with robust flavours and is delicious when roasted whole stuffed with thyme, parsley, lemon, butter white wine. Add a little chilli to give it a little more oomph!

It works wonderfully with Mediterranean flavours as well as Asian infusions and it is superb on the BBQ with a tandoori coating.

If pan frying, light coat in a little flour or coat in panko breadcrumbs and serve with tartare sauce.
