As it's name suggests, this is the centre part of the fish where it is the fattest and juiciest meat.
Some companies, when portioning fish, will portion it from the top working to the bottom. But this means you might get the same weight but the size is very different and the tail end will be much smaller and cook quicker than the middle. At The Upper Scale, we always portion from the middle so it is even all the way through.
