As a responsible business, The Upper Scale works in accordance with governing bodies such as The Marine Stewardship Council and The Marine Conservation Society, as well as our fish and seafood suppliers, to provide a market of sustainable produce.

In line with our commitment to sustainability, we withdraw certain items from our shop to maintain wild stock levels, while ensuring we offer the best farmed produce from reputable purveyors. Our focus on sustainability extends to our supply chain, with 90% of our fish sourced from ports around the UK, and our location at the heart of Billingsgate Market ensuring no additional haulage costs, resulting in a low carbon footprint.

At The Upper Scale we understand the importance of provenance to the chefs we supply and we work closely with them to promote sustainable choices that align with their ethos.
