- Our herring roe, otherwise known as herring milt is delicious.
- Derived from the male herring, this creamy delicacy may not look to appetising in its raw state but pan fried and spread on warm toast, it transforms into a mouth-watering delight.
- Coat them in Panko or golden breadcrumbs and fry until golden brown and serve with sherry vinegar and butter sauce , (one of Rick Stein’s favourite herring milt dishes).
- Not recommended for freezing as this can change the texture of the milt once cooked.
