- The Maldon Rock Oysters have a distinct flavour and meatiness inherent from the salt marshes where they are grown.
- These delicious oysters are excellent served on a bed of ice and samphire. Add a squeeze of lemon, a dab of shallot vinegar or even a splash of tabasco sauce if you’re daring enough.
- They can also be served deep fried or even baked.
- These delicious bi-valves are cultivated from seed and left to grow at a natural pace in bags fastened to racks to keep them away from natural predators.
- Store in a cool, dry place or in the fridge. Do not store in water or on ice.
- Consume within 3 days of delivery – the oyster must be alive when shucked, i.e. the shell is firmly closed.

These delicious bi-valves are cultivated from seed and left to grow at a natural pace in bags fastened to racks to keep them away from natural predators lurking on the river bed. In the nutritious, marshy environment of the blackwater river, they will take approximately three years to reach market size (80-110g).
Thereafter, they are carefully harvested, washed, and placed into tanks at our state-of-the-art depuration facility. All the oysters are picked, graded and packed by hand into food grade wooden boxes.
Oysters have been cultivated in the Blackwater estuary since roman times and the Maldon Oyster Company was formally established in 1960. Since then the company has flourished, and currently manages an area of 3500 acres of the Blackwater River.

The Upper Scale are based at the UK’s largest fish market, Billingsgate Market in London, where our expert buyer, with over twenty years experience, has access to a wide variety of quality fish. We also have representatives at all major ports in the UK, buying our fish direct from day boats and sustainable stocks.
